Fish baked in wine





1 cleaned white perch(about 1 kilo)

1 garlic(clove)

1 bundle of parsley(chopped finely)

3 large tomatoes (peeled,seedless,chopped)

1 lemon

100ml white wine

olive oil

salt
ground black pepper
Preparation:
Squash 1 garlic clove through a garlic press or squash with the knife.Inside of fish rub with olive oil , garlic and some finely chopped parsley.Make a couple of cuts on each side of fish and place

some garlic with parsley into each cut .Take a deep oven pan and pour some olive oil to the bottom.Place fish inthe middle .Arrange tomatoes,potatoes and lemon cuts around the fish with the remaining cloves of garlic.Pour some wine over everything then olive oil and season with salt and black pepper.Bake at preheated oven on 180C for about 50 minutes or until potatoes are done.Remember to often pour the fish while baking so it doesn't dry.If the liquid evaporates,add more wine if required.
